Considering she was a 3/4ths of a decade older than John, I would say she was babe enough for a man who could get many babes/women and did. But he chose her. She had something that appealed to the Beatle beyond being a babe.
We can surmise that her appeal to John was a combo of her attractive, petite, slender yet busty figure, a bit of foreign appeal, and she had already established an artistic career for herself. The creative mind she presented to John could well have been the final factor, offering him an artistic-minded female partner he could explore music and art with together.
She also provided a sense of maturity, someone who could fill the long absence and then early death of his mother. John even called her mother sometimes.
Beauty is in the eye of the beholder, after all.
